From first growth to the harvest, our work in the vineyard reflects our one goal : to produce quality wines which express their terroir. Throughout the growth cycle, we carefully monitor the progress of the vines and their fruit.

We harvest towards the end of September or the beginning of October, basing the picking date on the physiological ripeness of the grapes. We harvest each section of the vineyard seperately, during and after which the fruit is carefully selected prior to being placed in temperature controlled vats to undergo both alcoholic and malolactic fermentation.

Following fermentation, the wine is placed in oak barriques for about 12 months to mature. It is only after this that the different wines are blended and bottled. These specific stages in our winemaking allow for the creation of wines with appreciable body and aromas.
