Cellar Equipment : Temperature controlled stainless steel vats of 82 hectolitres.
Maturation : 12 months in oak barriques, 50% of which are new.
Vinification : Maceration prior to fermentation ; alcoholic fermentation for 8 days at 28oC ; regular lees removals and punching down ; maceration post fermentation ; 4-week contact between the wine and grape solids / marc.
Tasting Notes : Good structure and a deep colour. This wine is elegant yet robust, well balanced and rich in alcohol and extract, lightly woody on the nose and palate with aromas of ripe black fruit.
Advice : This wine can be aged for upto 10 years and should be served at room temperature. It is a pleasure to drink with game meat, poulty, red meat and older, firm cheeses.
